Do you like safe food? Do you hate spreading disease? Are your hands a little bit dirty today? Well then you, my friend, have reason for celebration. Today is Global Handwashing Day!

Children suffer disproportionately from diarrheal diseases – with more than 2 million children under five
dying every year from diarrhea and pneumonia‐related illnesses. The simple act of washing hands with
soap at critical moments (such as after using the toilet and before handling food) is a key cost‐effective
and life‐saving intervention. Research has shown that handwashing with soap can reduce the incidence
of diarrhea among children under five by almost 50 per cent, and respiratory infections by nearly 25 per
cent.

Hand washing is also a simple way to prevent the spread of foodborne illness. A few weeks ago, we let you know that StateFoodSafety.com had received accreditation from the American National Standards Institute, as a certificate provider for Food Handler Card training. Now, we have even more to celebrate as Governor Brown has signed Senate Bill 303 into law. SB 303, also known as the revised California Food Handler Law, became official on September 6, 2011. This law requires that all California Food Handlers receive Food Handler Training from an ANSI accredited program. The bill, more than nine months in the making, helps ensure that all California Food Handlers will receive consistent, instructionally sound training when procuring their California Food Handler Card.
We were privileged to be involved in the crafting of this bill and we would like to congratulate Senator Padilla, the bill’s author, as well as the entire California State Legislature for taking this important step toward ensuring the continued success of the California food service industry.

The best way to protect yourself from “what’s going around” this flu season is to wash your hands. December 5-11, 2010 is National Handwashing Awareness Week, where Henry the Hand will remind you of the four principles of handwashing:
- Wash your hands when they are dirty and before eating.
- Do not cough into your hands.
- Do not sneeze into your hands.
- Above all, do not put your fingers in your eyes, nose, or mouth.

Yes, that means you.
The CDC, FDA, and (of course) StateFoodSafety.com™ offer resources to help you remember the five basic steps to handwashing:
- Wet your hands with clean running water and apply soap. Use warm water if it is available.
- Rub hands together to make a lather and scrub all surfaces.
- Continue rubbing hands for 20 seconds. Need a timer? Hum the “Happy Birthday” song from beginning to end twice. We also recommend humming the “Alphabet Song” from A to Z.
- Rinse hands well under running water.
- Dry your hands using a paper towel or air dryer. If possible, use your paper towel to turn off the faucet.

Last May, during the NBA playoff game between the Phoenix Suns and the LA Lakers, Sun’s coach Alvin Gentry puked into a garbage can–on national TV. The reason? He attributed the illness to Kobe Bryant, but the real culprit was a grilled artichoke he ate before the game.
It can be easy to forget why food safety education is so important. Many of the rules we teach seem merely hypothetical, until something like Coach Gentry’s food poisoning occurs. It’s clear that foodborne illness can affect anyone–and it always seems to come at the least convenient times!
